Latest attempts

Sheer Kurma - I prepared this for Eid. I added more nuts than called for. Only then will sheer kurma taste like sheer kurma! Although preparing this was quite time consuming, it was worth the effort!

Apple Cupcakes - Very moist, soft and delicious. Apple tastes great in cakes and muffins.

Chettinad Chicken Curry - Very easy to prepare and very tasty. I halved the recipe and ofcourse reduced the spice...!

Beetroot Halwa - Very rich and delicious. I reduced the sugar to one cup and still found it quite sweet! Something I can make often, with carrots and beetroots that are lying around for too long : )

Cinnamon Rolls!

After seeing this post I just could not rest in peace till trying it out. : ) However I wanted a low fat version plus I thought 5 cups of flour was too much for me and my husband who are supposed to be on a diet. It would make us overeat. Searching in my all time favorite recipe site I found this simple way of preparing Cinnamon Rolls. And what I liked best about this recipe was I could prepare the rolls the night before and refrigerate it overnight for rising. I just had to take it out in the morning and bake it! That saves a lot of time during the rush hour!

For those of you who want to try out this recipe and are not on a diet, adding more butter and sugar might result in an even more delicious rolls : ). I thought the rolls could be sweeter.

Anyway, after trying out these cinnamon rolls I want to try Nabeela's version even more now! And there is this Clone of a Cinnabon that looks quite appealing too. Maybe I can forget my diet for a while.

Breakfast Potatoes

Fish Coconut Milk Curry - A Rich curry. A good break from the regulars.

Raisins Walnut Biscotti - Very crunchy! I don't think craisins are available here, I used raisins. I was hovering between this and Italian Almond Bars when I realized that the bars are going to be soft. Should try that out some day InshaAllah.

A Healthy Dinner

Our dinner was Matar Paneer, Alu Palak ( I did not have methi so therefore substituted the methi for palak.) and Rotis. Looks like quite a simple fare but the matar paneer was delicious! Due thanks to Nandita of Saffron Trail for sharing a low fat, healthy and delicious dish! And ofcourse thanks to Nabeela too for sharing her version of Alu Methi. : )

Sab Al Qafshah - Pour by spoon : )

Desperately searching for breakfast recipes, I came across this extremely yummy looking dish! We don't have date molasses here, so we used Honey instead. Maybe date syrup will do too...

I'd suggest adding one eighth to a quarter teaspoon more salt as I thought it was quite bland otherwise.

Very easy to make!

Tamatar Aloo - Potatoes in Tomato gravy

Who doesn't love potatoes??? Give it to me in any form ( except raw ofcourse : ) ) and I will relish every bit of it.

This potato curry is so delicious that this is all I am going to make with potatoes for some time. The fennel gives this curry a really good flavor. This is for the first time that I would have used a lot of fennel powder, I should try this out on other dishes too!

Beet Bread

Assalamu alaikum,

Out of breakfast dishes? Bored of making dosas, idlis and appams and too lazy to try out the exotic bread recipes in your latest baking book? Why not try out Saffron Trail's Beetroot bread. Simple and easy to make. Try this out some day and you won't be disappointed.

Oh, I forgot to mention that I found 1 tsp of salt too much for my taste. Change as per your taste. : )

Saffron Rice

Ghee rice is one of our home favourites. Now, how about that rice being flavoured with saffron? Not only does it give out a nice aroma, it's quite a pretty presentation too.

And once again, this recipe is from Nabeela's blog. Try out Saffron Rice some day and it's worth it. The method of cooking rice given in this recipe is the best part of it. I never had a more fluffier and well cooked rice! The cooking time was less for me though, so watch out.

Marag!

Assalamu alaikum,

It had been a long time since I tried something new. Going through Nabeela's blog, I noticed that her Marag had many rave reviews. It seemed quite simple so I had to give it a try. And mashaAllah I am glad I tried it because it was amazingly delicious. I never liked a soup so much. It was quite appreciated by my better half too and got over in no time. So, next time you hear someone sniffing or coughing or when you just simply want another dish at your table you know what to make. : )
